Best Meat for Nihari: Tender Cuts
Which cut should you buy?
For a home pot of nihari, beef shank is a dependable first choice: it has connective tissue that softens during slow moist cooking, and that gelatin helps give the broth body. If shank is unavailable, ask the butcher for a slow-cooking beef cut such as chuck rather than a very lean steak cut.
Shank, chuck, bone-in and boneless
- Beef shank: a strong all-round choice for tender meat and a full-bodied broth after patient cooking.
- Beef chuck or another stewing cut: a practical alternative when shank is unavailable; tenderness depends on the exact cut and piece size.
- Bone-in pieces: can add flavour and a traditional presentation, but take care when serving around bones.
- Boneless pieces: easier to portion and eat, though the broth may need more help from stock and careful reduction to reach the body you want.
Why very lean cuts can disappoint
Lean quick-cooking cuts are designed for different jobs. In a long simmer they can become dry or stringy before the broth develops the texture expected from nihari. Choose a cut that suits slow cooking, and let time—not a hard rolling boil—do the tenderising.
Piece size and doneness cues
Large shank pieces take longer to become tender than small boneless cubes. Ask for even pieces and start checking tenderness before assuming every pot will finish at the same time. A fork should enter easily and the meat should yield without feeling tight or rubbery.
Slow pot or pressure cooker?
A pressure cooker can shorten the tenderising stage, but timing varies with the appliance, amount of meat, cut and piece size. Follow your cooker manual, use its minimum liquid guidance, and release pressure safely before opening. If the meat is still firm, continue cooking rather than thickening the gravy too early.
Finish the gravy after the meat is tender
Let the beef become tender before thickening the gravy. If you add atta, whisk it with a little slightly cooled nihari liquid in a separate bowl, then stir it in gradually and simmer gently until the raw flour taste disappears. If the gravy becomes too thick, loosen it with hot water or stock a little at a time. See the full Pakistani Beef Nihari recipe for ingredient quantities and the complete method.
Urdu / Roman Urdu: Nihari ke liye konsa gosht best hai?
Roman Urdu: Nihari ke liye aisa beef ya mutton cut useful hota hai jo slow cooking ko handle kare aur connective tissue rakhta ho. Shank ya similar slow-cook cuts gravy ko body dete hain; boneless lean meat akela jaldi dry ho sakta hai.
اردو: نہاری کے لیے ایسا گوشت بہتر رہتا ہے جو آہستہ پکانے کو برداشت کرے اور جس میں کچھ connective tissue ہو۔
