How to Cook Chickpeas Until Tender

Quick answer: Soak dried chickpeas well, cook them in fresh water until completely tender, and add strongly acidic ingredients after they have softened for a more predictable texture.

Start with the age of the chickpeas in mind

Dried chickpeas do not all cook at the same speed. Older stock can remain firm much longer than recently dried chickpeas, so use texture rather than a rigid clock time as the final test.

Soak for more even cooking

An overnight soak usually shortens the cooking stage and helps the centres hydrate more evenly. Drain and rinse after soaking, then cook in fresh water according to your recipe.

Keep enough cooking liquid in the pot

Chickpeas need sustained moist heat to soften. If the water level becomes too low while they are still firm, add hot water rather than letting the pot dry out.

Delay strongly acidic ingredients

Tomato, tamarind and other acidic ingredients can make the softening stage less predictable. For reliably tender chickpeas, cook them until soft before finishing them in an acidic curry or chaat dressing.

Test the centre, not just the skin

A chickpea can look swollen while still having a firm or chalky centre. Bite or press one before moving to the final masala stage.

Finish in the masala after tenderising

Once the chickpeas are properly soft, simmer them with the onion-tomato masala long enough to absorb flavour. This separates the tenderness problem from the flavour-building stage.
