How to Keep Pakistani Kababs Juicy

Quick answer: Use mince with enough fat, avoid overworking or overcooking it, and cook over properly heated equipment so the outside browns before the inside dries.

Start with mince that is not excessively lean

A moderate amount of fat helps minced-meat kababs remain succulent during high-heat cooking. Very lean mince has less margin for error and can become dry quickly, especially in small or thin shapes.

Control excess moisture

Juicy does not mean wet. Onion, herbs and marinades can release liquid that makes a mixture difficult to shape. Drain or squeeze very wet ingredients when the recipe calls for it so the kabab can brown instead of steaming.

Mix enough for the kabab style

Seekh kabab needs a cohesive mixture that holds together, while overhandling can make some minced-meat preparations dense. Follow the technique for the specific kabab rather than treating every style identically.

Use properly heated cooking equipment

A hot grill, pan or oven helps the exterior brown promptly. Starting on weak heat can prolong cooking and allow more moisture to escape before useful colour develops.

Shape evenly and avoid squeezing out moisture

Make kababs a consistent thickness so they cook at a similar pace. Press firmly enough for the mixture to hold, but do not keep compressing it into a hard, dense shape. If the mixture is too soft to handle, chill it briefly and follow the recipe rather than adding large amounts of flour or breadcrumbs that can change the texture.

Use a food thermometer for safe doneness

Colour alone cannot confirm that minced meat is safely cooked. For ground beef, lamb or other red meat, use a clean food thermometer and cook to 160°F (71°C). Ground poultry should reach 165°F (74°C). Check the centre of the thickest kabab and follow current local food-safety guidance. See the USDA/FoodSafety.gov safe minimum temperature chart.

Serve soon after a brief rest

A short rest lets the kababs settle after cooking. Do not leave them uncovered for a long time; evaporation continues after they come off the heat.
