Why Does Chicken Tikka Turn Dry? 6 Fixes
Pakistani chicken tikka needs a browned, lightly charred outside without turning tough inside. Dryness usually comes from uneven pieces, excessive cooking, or leaving cooked chicken on the heat while waiting for the rest of the meal. A yogurt marinade helps flavour and coating, but it cannot rescue chicken that is cooked for too long.
1. Cut pieces to a similar size
Make boneless cubes or portions of similar thickness. Small pieces finish before large ones; if you wait for the largest piece, the smaller ones can become dry. Chicken breast is lean and less forgiving than thigh, so watch it closely rather than using the same timing for every cut.
2. Use a thick, balanced yogurt marinade
Thick plain yogurt helps the spices cling. Lemon juice adds tang, while ginger-garlic, cumin, coriander and chilli build the familiar tikka flavour. Too much watery marinade can drip away and steam the surface. Pat the chicken dry before coating it, and avoid adding extra acidic ingredients without adjusting the recipe.
Marinate covered in the refrigerator, not on the counter. For this site's Pakistani chicken tikka recipe, allow at least two chilled hours. Keep raw chicken and its marinade away from ready-to-eat chutney, salad and cooked food.
3. Remove heavy excess marinade
The pieces should be coated, not dripping. Let excess marinade fall back into the bowl before grilling. A thick wet layer may darken or burn before the centre cooks, especially over direct flame. Never serve marinade that touched raw chicken unless it has been thoroughly cooked.
4. Give the heat and skewers room to work
Preheat the grill, oven grill or pan. Space pieces apart so hot air can reach their sides; tightly packed skewers trap steam and brown unevenly. Turn when the first side has coloured and releases easily. If the outside burns while the centre is still undercooked, move the pieces away from the strongest flame or lower the heat slightly.
5. Check doneness safely
Charred spots do not prove the centre is safe, and surface colour alone is unreliable. Use a food thermometer in the thickest piece and cook chicken to 74°C (165°F). Once it reaches that temperature, remove it rather than leaving it on the heat “just in case.” This is the most useful way to balance safety with juiciness.
6. Rest briefly, then serve
Rest the tikka for a few minutes after cooking, then serve with mint chutney, onion and lemon. If grilling in batches, keep finished pieces warm without continuing to cook them directly over the flame. Refrigerate leftovers promptly and reheat only the portion you need until thoroughly hot; repeated or prolonged reheating dries grilled chicken.
Quick troubleshooting
| What you notice | Likely cause | What to change next time |
|---|---|---|
| Dry, hard centre | Overcooking or pieces too small | Cut evenly and check the thickest piece with a thermometer. |
| Burnt outside, undercooked centre | Heat too fierce for the piece size | Use moderate-high heat, turn as needed and move away from direct flame if charring too fast. |
| Pale, wet surface | Too much liquid marinade or crowded skewers | Shake off excess marinade and leave gaps between pieces. |
| Some pieces juicy, others dry | Uneven size or thickness | Cut uniformly and remove smaller pieces when safely cooked. |
