Why Jalebi Turns Soft (and How to Keep It Crisp)
Frying temperature sets the structure
Oil that is too cool can leave jalebi greasy and poorly crisped, while excessive heat colours the exterior before the inside structure has time to cook properly. Keep the heat controlled through each batch.
The batter must hold its shape
A very thin batter spreads and can produce weak spirals that soften quickly. A batter that is too thick is difficult to pipe. Follow the recipe's consistency and fermentation or resting method rather than correcting blindly with flour or water.
Fry until the spirals are actually crisp
Colour alone is not enough. The fried jalebi needs a set structure before it enters syrup; under-fried spirals absorb moisture and lose crispness rapidly.
Syrup consistency matters
Very thin syrup adds too much water, while excessively heavy syrup may not coat evenly. Use the syrup stage specified by the recipe and keep its temperature suitable for dipping.
Do not leave jalebi soaking indefinitely
Dip long enough for syrup to coat and flavour the spirals, then remove them. Prolonged soaking keeps moving moisture into the fried structure and makes it softer.
Prevent condensation during storage
Jalebi is at its crispest fresh. If storing briefly, avoid sealing it while still warm because trapped steam condenses inside the container and quickly softens the surface.
Urdu / Roman Urdu: Jalebi crispy rehne ke bajaye soft kyun ho jati hai?
Roman Urdu: Jalebi soft ho sakti hai agar frying temperature unsuitable ho, batter structure weak ho ya syrup exposure zyada ho. Crisp jalebi ke liye frying aur chashni dono ki consistency aur timing important hain.
اردو: جلیبی نرم ہو سکتی ہے اگر تلنے کی آنچ درست نہ ہو، بیٹر کمزور ہو یا چاشنی میں بہت دیر رہے۔
