Why Do Kababs Break While Frying? 6 Causes and Fixes
1. Check the ingredient balance first
Check whether the mince mixture is too wet or has too little binder for its ingredients. Wet onions, excess yogurt or extra liquid can weaken the mixture; drain or reduce moisture before shaping.
2. Preparation changes the final texture
Grate or chop onions finely and squeeze out excess liquid if the recipe calls for it. Mix until the ingredients hold together, then chill the shaped kababs for 20–30 minutes so the fat firms and the surface becomes easier to handle.
3. Heat that is too high can create a false shortcut
Heat the pan and oil before adding kababs, but avoid smoking-hot oil. Let the first side form a crust over medium heat before trying to turn it; moving it too early can tear the surface.
4. Too much cooking can be as damaging as too little
Do not press kababs flat with the spatula while frying. Turn gently once the underside releases, and cook until the centre is done according to the recipe and meat type.
5. Fix a loose mixture gradually
If the mixture still cracks, test one small kabab first. Add binder such as roasted gram flour or breadcrumbs only a spoonful at a time when it suits the recipe; too much can make the kabab dense.
6. Judge the process, not just the final appearance
Shape pieces to a similar thickness and avoid overcrowding the pan. A test kabab helps reveal whether the mixture needs chilling, a little binder or gentler handling before the full batch is fried.

Roman Urdu: Kabab ka mixture zyada geela, warm ya weakly bound ho to frying mein toot sakta hai. Mixture ko chill karein, extra moisture control karein aur pehli side set hone se pehle kabab ko bar bar na paltein.
