Why Is Kheer Grainy?

Quick answer: “Grainy” kheer can mean different things. If you feel firm rice particles, the rice needs more gentle cooking. If you see tiny rough milk particles, the milk may have scorched or split. If the texture feels sandy after sugar, crystals or poorly dissolved solids may be involved. Identify the texture before trying to fix it.

1. The rice is still too firm

In rice kheer, ¼ cup soaked basmati cooks in 1 litre full-fat milk until very soft. The rice should crush easily against the side of the pot. If distinct hard grains remain, keep the heat low, add a small splash of hot milk if necessary and cook longer before adding more sugar. Lightly mashing some fully softened rice releases starch and gives kheer its natural creamy body.

2. Milk solids caught on the bottom

Milk can form a cooked layer on the base of the pot. If that layer browns and is scraped back into the kheer, it creates brown specks and a rough taste. Use a heavy pot, keep the simmer gentle and sweep the spoon across the base regularly—especially later when the mixture is thicker.

If the bottom has actually scorched, do not scrape it up. Transfer the unburnt upper kheer into a clean pan. A strongly burnt flavour usually cannot be hidden with cardamom or extra sugar.

3. The milk has split

Kheer should be creamy, not curdled. Acidic additions, spoiled milk or severe heat can make milk proteins separate into fine curds and watery liquid. Rose water should be added only after the heat is off in this recipe; do not add lemon or other acidic flavourings to milk kheer.

4. Sugar was added before the rice became tender

In the Pakistan Food method, sugar goes in only after the rice is very soft. Sugar temporarily loosens the mixture and can slow your judgement of the final body. Get the rice texture right first, dissolve the sugar fully, then continue the gentle reduction.

Can grainy kheer be fixed?

What should finished kheer look like?

The rice should be completely tender, the milk should coat the rice and spoon, and the hot kheer should be a little looser than the texture you want after chilling. It will thicken further as the starch and reduced milk cool.
