Why Does Sugar Syrup Crystallize? Pakistani Sweets Guide
Sugar was not fully dissolved
Before bringing the syrup to a boil, stir until the sugar crystals dissolve in the water. Undissolved grains left at the bottom can seed crystallization as the syrup cools.
Crystals remain on the pan sides
Sugar crystals on the sides of the pan can fall back into the syrup and start new crystals. While the syrup is heating, carefully wash down the sides with a clean wet pastry brush or cover the pan briefly to let steam dissolve them.
The syrup is agitated at the wrong stage
Once the sugar has dissolved and the syrup is boiling, avoid unnecessary stirring if the recipe calls for a clear syrup. Swirl the pan gently instead of scraping crystals from the sides into the liquid.
Concentration becomes too high
Boiling too long removes too much water and makes the syrup more concentrated, which can encourage crystals. Follow the recipe's consistency cue and remove the pan from heat when it reaches that stage.
A dirty utensil can seed crystals
Use a clean spoon and pan without sugar grains or crumbs. Even a few crystals can act as a starting point for more crystals as the syrup cools.
Control cooling and storage
Pour the syrup into a clean container and avoid scraping dried crystals from the pan sides into it. Let it cool as directed and keep the rim clean when storing leftovers.
