Biryani vs Pulao: What Is the Difference?
Biryani usually separates rice and masala stages
Many biryani methods cook a spiced meat or vegetable masala separately while rice is parboiled in another pot. The components are then layered and finished together with dum.
Pulao cooks rice in seasoned liquid
Pulao commonly develops a stock or yakhni and cooks the rice in that liquid. This gives the grains a more even flavour throughout rather than the deliberately varied layers of biryani.
Spice level is not the defining difference
A mild biryani is still biryani and a strongly seasoned pulao remains pulao. The cooking structure is a more useful distinction than simply deciding which dish tastes hotter.
Moisture control differs
Biryani rice is drained after parboiling, so the masala and dum provide the remaining moisture. Pulao relies much more directly on getting the total stock-to-rice balance right in the same pot.
Both have many regional versions
Pakistani biryanis and pulaos vary by city, family and occasion. Ingredients can overlap, so individual dishes should be understood through their actual method rather than a rigid ingredient checklist.
Which one should you cook?
Choose biryani when you want layered rice, masala and a dum finish. Choose pulao when you want rice to absorb a seasoned broth and prefer a more unified one-pot rice technique.
