Doodh Patti vs Masala Chai: What Is the Difference?
Doodh patti is deliberately milk-forward
Doodh patti is built around strong tea simmered with a generous proportion of milk. The result is rich, creamy and tea-led without requiring a complex spice mixture.
Masala chai makes spices a defining feature
Masala chai includes aromatic spices such as cardamom, ginger, cinnamon, cloves or black pepper in combinations that vary by household. The spice profile is more central than it is in basic doodh patti.
Both need enough tea strength for the milk
Milk softens tea's bitterness and colour, so a weak brew can taste flat. Use enough tea leaves for the amount of milk rather than extending the boil indefinitely to create strength.
Control bitterness with time and leaf quantity
Boiling tea leaves aggressively for too long can extract harsh flavours. If your chai repeatedly becomes bitter, adjust the quantity of tea and brewing time before simply adding more sugar.
Add delicate spices at the right stage
Whole spices can simmer to release flavour, while some fresh or ground aromatics become overpowering when cooked excessively. Follow the recipe sequence and taste before increasing the spice load.
Which chai should you make?
Choose doodh patti when you want a rich, straightforward milk tea. Choose masala chai when warming spices should be a prominent part of the cup rather than a subtle accent.
