How to Balance Kashmiri Chai

Quick answer: Build the colour in the tea concentrate before milk. For the Pakistan Food recipe, 2 tbsp Kashmiri green tea, 3 cups water and ¼ tsp baking soda are boiled down, aerated with 1 cup ice-cold water, strained, then finished with 2 cups milk. If the colour is weak, improve reduction and aeration before adding more baking soda.

Colour and flavour are linked

Pink Kashmiri chai is not ordinary green tea coloured with milk. The deep reddish-brown concentrate develops through the tea, alkalinity, reduction and aeration. Milk then reveals the rosy shade. If you chase colour by using excess baking soda, the drink can taste alkaline or soapy even if it looks brighter.

Work in this order

  1. Extract and reduce: boil the Kashmiri tea with the measured water and baking soda until the liquid becomes concentrated and reddish-brown.
  2. Aerate: add cold water carefully, then whisk or repeatedly lift and pour the brew for several minutes.
  3. Strain: remove the leaves once the concentrate is developed so they do not keep extracting and become harsh.
  4. Add milk: combine the prepared concentrate with milk and heat gently. Judge the final colour only now.
  5. Season last: add sugar for the sweet Pakistani style, or salt for a savoury Noon chai style, after tasting.

How to judge each variable

Do not use baking soda as a colour shortcut

The ¼ tsp in this recipe is already a deliberate amount for a multi-cup batch. Tea varieties differ, so there is no guarantee that more soda will produce a prettier pink. It can easily damage flavour. If colour is disappointing, first check the tea itself, the depth of the concentrate, aeration and the point at which milk was added.

Cardamom and nuts are finishing flavours

Four lightly crushed green cardamoms for this four-cup batch give a clear aroma without turning the drink into generic masala chai. Add milk and cardamom after the concentrate is strained. Pistachio and almond belong at serving time so their texture stays distinct.

Roman Urdu

Kashmiri chai ka pink rang milk dalne se pehle tea concentrate mein develop hota hai. Baking soda zyada karna shortcut nahin; taste soapy ho sakta hai. Pehle tea ko deep reddish-brown concentrate tak reduce karein, cold water se aerate karein, leaves strain karein aur phir milk add karein.
