How to Keep Roti Soft After Cooking
Start with a soft workable dough
Make a soft, pliable dough rather than a stiff one. Add water gradually because atta absorbs differently by brand and freshness; the dough should come together without cracking at the edges.
Rest the dough before rolling
Cover the dough and let it rest for about 15–20 minutes so the flour can hydrate and the dough relax. If it still feels tight, give it a little more rest before rolling.
Use minimal bench flour
Use only a light dusting of dry atta while rolling and brush off loose flour before the roti reaches the tawa. Excess flour can dry on the surface and make the cooked roti feel tough.
Cook quickly on a properly heated tawa
Cook on a properly heated tawa so the roti puffs and develops light brown spots without staying on the heat too long. If it chars before cooking through, reduce the flame slightly.
Do not dry the roti after it is cooked
After cooking, place the roti in a clean covered container or wrap the stack in a clean cloth. Covering limits moisture loss; do not leave hot rotis exposed on a plate for long.
Hold cooked rotis covered
Keep the stack covered between batches and serve while warm. If a roti has cooled, warm it briefly on the tawa rather than cooking it for a long second round, which can make it dry.
