How to Make Yakhni for Pakistani Pulao

Quick answer: Simmer bone-in meat with water, onion and whole aromatic spices until the meat is tender and the stock tastes clearly seasoned. Strain the stock, keep the meat, then measure the yakhni you actually need for the rice. Pulao should taste of its stock before garam masala or garnish enters the picture.

Use bones for body and flavour

Bone-in chicken or beef gives yakhni more savoury depth than plain water. Chicken stock cooks faster; beef needs longer gentle simmering. Keep the boil controlled so the liquid stays cleaner and the meat does not become ragged.

Choose whole spices that can be strained

A typical Pakistani pulao yakhni can include black peppercorns, cloves, green or black cardamom, cinnamon, bay leaf and cumin. Tie very small spices in muslin if you want an especially clean stock. The objective is aroma, not a mouthful of loose cloves in every serving.

Do not oversalt the raw stock

Yakhni reduces while the meat cooks and then reduces again as the rice absorbs it. Season enough that the strained stock tastes pleasantly savoury, then make the final salt adjustment immediately before the rice goes in. If you use a commercial stock cube, count its salt before adding more.

Measure after straining

Different pots lose different amounts of water. That is why the water you started with is not the same as the yakhni available for rice. Strain first, measure the finished stock, and use the liquid ratio appropriate to your soaked basmati and pot.

How to tell yakhni is ready

Roman Urdu

Yakhni mein bone-in chicken ya beef, onion aur whole spices ko gentle simmer dein. Meat tender ho aur stock aromatic ho jaye to strain karein. Rice add karne se pehle finished yakhni ko measure aur taste karein; starting water ko final quantity na samjhein.
