How to Reduce Curry Without Burning the Masala

Quick answer: Use a wide heavy pan, cook uncovered when you need evaporation, and lower the heat as the gravy gets thicker. Stir from the base more often near the end because onion, tomato and spice solids scorch much faster once free water has disappeared.

Reduction speed changes during cooking

A watery gravy can tolerate medium or medium-high heat because liquid buffers the base. Later, the same flame becomes risky: less water remains, sugars and milk solids concentrate, and the masala can stick between stirs. Heat should come down as viscosity goes up.

Pan width matters

A wide karahi or sauté pan exposes more surface area, so excess water leaves without requiring a violent boil. A narrow deep pot can force you to cook much longer, which is especially unhelpful when chicken is already tender.

Scrape cleanly, not constantly

Use a flat wooden spoon or spatula that reaches the bottom. Stir enough to prevent a cooked film from becoming a black layer, but allow brief undisturbed periods so moisture can evaporate. If a brown fond develops and smells savoury, loosen it into the gravy before it turns acrid.

Stop at the texture the dish needs

Karahi should have concentrated masala clinging to the chicken. Qorma remains more flowing. Keema may be drier. Do not keep reducing just because visible oil has not formed a dramatic layer; the correct endpoint belongs to the dish.

If the base starts catching

Roman Urdu

Curry ko reduce karte waqt gravy thick hoti jaye to heat kam karte jayein. Wide pan use karein aur bottom ko regularly scrape karein. Agar masala catch karne lage to 1–2 tbsp hot water sirf zarurat par add karein; burnt layer ko mix na karein.
