Why Is Curry Watery?
Quick answer: Watery curry usually contains more liquid than the sauce solids can hold because tomatoes, meat or yogurt released moisture, extra water was added, or steam could not escape. The cleanest fix is usually controlled uncovered reduction—not flour.
Identify where the water came from
Chicken releases juice, tomatoes can be extremely watery, yogurt contains whey, and frozen ingredients shed extra water as they heat. If you also add a cup of water automatically, the curry may be diluted before the masala has had a chance to concentrate.
Use the lid strategically
A lid helps tough meat soften without losing too much moisture, but it works against reduction. Once the meat is nearly tender, uncover the pan so steam can escape. For tomato-heavy karahi, much of the cooking is intentionally uncovered.
Choose the right pan
A wide pan reduces faster than a narrow deep pot because more liquid surface is exposed. This matters when chicken is already cooked: reducing efficiently is safer than simmering tender meat for another 30 minutes just to thicken the sauce.
Do not thicken every Pakistani curry with starch
Flour or cornflour can make a sauce look thick quickly but often changes the texture. Karahi gets body from tomatoes; qorma from onion, yogurt and reduction; nihari is a special case where an atta slurry is part of the style. Match the correction to the dish.
Stop reduction at the right point
As the gravy thickens, lower the heat and stir more often. Stop when it coats the meat or spoon at the consistency the recipe expects. Continuing until all visible liquid disappears can turn a corrected curry into a scorched one.
