Why Does Chicken Release Water in Curry?

Chicken contains natural moisture, so some liquid in the pan is normal. The problem is usually that too much liquid collects faster than it can evaporate. The result can be a thin gravy, pale masala or chicken that stews instead of browning.

Quick fix: Use fully thawed, well-drained chicken; heat the pan before adding it; avoid overcrowding; and let excess liquid simmer uncovered before adding more water or finishing the masala. Do not keep frying until the chicken becomes dry.

1. The pan is too crowded

When chicken pieces are packed tightly together, they release moisture into a crowded pan and steam builds up. The pan temperature drops, so the liquid takes longer to evaporate. Cook in two batches if the pieces cover the whole base or pile on top of one another. Leave a little space between pieces.

2. The chicken is still wet or partly frozen

Thaw frozen chicken completely in the refrigerator, then drain it well and pat the surface dry with clean kitchen paper. Water clinging to the pieces can cool the pan and delay browning. Never leave raw chicken at room temperature for extended thawing.

3. The marinade contains too much thin liquid

Yogurt, lemon juice and other marinade ingredients add moisture. Use the amount the recipe calls for rather than pouring in extra liquid. If the marinade has separated into a watery pool, let the excess drain off before cooking. Thick yogurt usually clings better than a very runny mixture.

4. Heat and timing are not matched to the dish

For karahi, let the chicken cook in a hot, wide pan and allow released liquid to reduce before finishing the tomato masala. For a curry designed to have gravy, some liquid is expected: reduce only until the consistency you want is reached. A lid traps steam, so keep the pan uncovered during the reduction stage and stir occasionally to prevent sticking.

How to rescue watery chicken curry

  1. Check that the chicken is cooked through; do not rely on colour alone.
  2. If the chicken is tender but the gravy is thin, lift the pieces onto a clean plate temporarily.
  3. Simmer the gravy uncovered over a steady medium heat, stirring so the onion, tomato and spices do not catch on the base.
  4. When the masala thickens, return the chicken and turn it through the sauce briefly.
  5. Taste before adding salt or spices: reducing liquid concentrates the seasoning already in the pan.

For food safety, chicken should reach an internal temperature of 74°C (165°F) at its thickest part. If the chicken is not cooked through, continue cooking safely rather than removing it early just to thicken the gravy.
