Chicken Qorma vs Chicken Handi: What Is the Difference?
Qorma builds depth from onions and spices
Many Pakistani qorma methods rely on well-browned onions, yogurt and aromatic whole or ground spices. The onion base contributes both colour and body, so rushing that stage changes the finished gravy.
Handi is a broader modern restaurant-style category
Chicken handi recipes vary widely, but many versions use tomato, yogurt or cream for a smoother, richer gravy. The name does not guarantee one fixed ingredient list, so compare actual recipes rather than assuming every handi is identical.
The gravies taste different
Qorma tends to emphasise warm spice, browned onion and yogurt depth. A creamy handi can taste softer and more tomato- or dairy-forward, although the exact balance depends on the cook.
Neither dish is defined only by cream
Adding cream to a curry does not automatically make it handi, and qorma can be rich without cream. Technique and the structure of the masala matter more than one finishing ingredient.
What should you serve with them?
Both work with naan, roti or rice. A richer handi can benefit from fresh salad or raita, while qorma's aromatic gravy pairs especially well with breads that can pick up the sauce.
Which should you cook?
Choose qorma when you want a deeper browned-onion and yogurt curry. Choose handi when the specific recipe offers the smoother, creamier or tomato-led profile you want.
