Why Does the Bottom of Biryani Burn?

Quick answer: The bottom usually burns because direct heat stays too high after layering, the pot base is thin, or the masala has too little moisture to survive the dum period. Once the pot is sealed, biryani needs gentle trapped heat—not an active fry at the base.

High dum heat is the most common cause

Bring the assembled pot up to temperature only as needed, then move to very low heat. If you can hear fierce frying or smell toasted rice early in dum, the bottom is getting much hotter than the top.

A thin pot creates hot spots

Light aluminium or steel transfers burner heat quickly. A flat tawa or heat diffuser under the biryani pot spreads that heat over a wider area. This is especially useful on small gas burners that concentrate flame in one ring.

Masala can be too dry as well as too wet

Watery masala makes rice mushy, but bone-dry masala can scorch before enough steam circulates. The correct base is concentrated and coating the chicken, with some cooking fat and moisture still present.

Dum time depends on how cooked the rice already is

If rice is almost fully tender before layering, a long dum does not improve it; it only increases the risk of a burnt base and soft upper grains. Drain rice with a firm centre so dum has a real job to finish.

If you smell burning

Turn off the heat immediately and move the pot to a cool surface. Do not scrape the bottom into the rest of the biryani. Serve from above and leave the scorched layer behind. A strong burnt smell may still affect the pot, but mixing the black layer through guarantees bitterness.

Roman Urdu

Biryani ka bottom aksar high dum heat, thin pot ya bohat dry masala ki wajah se jalta hai. Dum low heat par dein aur zarurat ho to pot ke neeche tawa rakhein. Burn smell aaye to bottom ko scrape karke rice mein mix na karein.
