Why Is Biryani Colour Uneven?

Quick answer: Some colour variation is desirable. Pakistani biryani can show white grains, masala-tinted grains and a few golden or orange patches. The problem is not unevenness itself; it is concentrated wet colour that stains one clump while leaving the rest untouched.

Do not aim for uniformly orange rice

Biryani is layered, not mixed like fried rice. White grains make the coloured areas look more appetising and show that the rice was handled gently. A completely uniform colour often means the pot was stirred more than necessary.

Dilute concentrated colour first

If using a permitted food colour, dissolve a tiny amount in a spoonful or two of water or milk rather than dropping powder directly on rice. If using saffron, bloom a small pinch in warm liquid. The total finishing liquid should stay modest.

Drizzle across several points

Use a spoon to make small streaks over the upper layer. Think of four or five small areas rather than one centre puddle. Dum carries aroma through the pot; it does not need a bath of coloured liquid.

Do not correct patches by stirring hard

After dum, aggressive mixing smears masala, releases starch and breaks basmati. Rest the pot, then lift from the sides. The natural mix of white and coloured grains will appear more balanced on the serving platter.

When colour is a warning sign

If one area is dark because it is wet and clumped, check moisture control. If the bottom is dark brown and smells toasted, that is scorching, not colour distribution. Fix the cooking issue rather than adding more colour.

Roman Urdu

Biryani mein kuch white aur kuch coloured grains normal aur attractive hain. Food colour ya saffron liquid ko aik jagah na dalen; 4–5 chhoti jaghon par drizzle karein. Dum ke baad colour equal karne ke liye rice ko zor se mix na karein.
