Why Is Jalebi Not Crispy?
Quick answer: Soft jalebi usually comes from thin batter, cool oil, under-frying or too long in syrup. The spiral must become crisp in the oil before it is briefly coated with warm, fluid syrup. Syrup cannot create crispness in a jalebi that left the oil soft.
1. Batter is too thin
The Pakistan Food batter uses 1 cup plain flour, 2 tbsp cornflour, ½ tsp instant yeast and about ¾ cup lukewarm water added gradually. “About” matters: flour absorbs differently. Stop adding water when the batter is thick but pipeable and can leave a connected spiral instead of spreading into a flat lace.
If your test spiral spreads immediately, mix in a small amount of flour and retest. Large corrections can make the batter heavy.
2. The batter was not rested enough—or was over-fermented
The batter should become lightly bubbly, not dramatically risen like bread dough. A short controlled rest helps develop flavour and structure. If it becomes excessively foamy and weak, spirals can lose definition.
3. Oil is too cool
A little test batter should rise steadily and bubble without becoming dark immediately. If it sits heavily and absorbs oil, the temperature is too low. If it browns before you finish piping a compact spiral, the oil is too hot. Work in small batches so each addition does not crash the oil temperature.
4. Jalebi leaves the oil before it is crisp
Colour alone is not enough. Fry gently, turning as needed, until both sides are evenly golden and the structure feels set. A pale soft spiral will become even softer after syrup.
5. Syrup is too thick or the soak is too long
For this recipe, 1½ cups sugar and 1 cup water are simmered until the sugar dissolves and the syrup lightly coats a spoon. It should remain warm and fluid. The hot fried jalebi gets only a short dip. Long soaking pushes syrup deeper and softens the crisp shell.
6. Steam softened jalebi after frying
Do not seal warm jalebi in an airtight container. Trapped steam condenses on the surface and destroys crispness. Let excess syrup drain and serve while the spirals still have a crisp bite.

| Symptom | Most likely check |
|---|---|
| Spiral spreads flat | Batter too thin |
| Jalebi oily and soft | Oil too cool or batch too crowded |
| Dark outside, soft centre | Oil too hot |
| Crisp before syrup, soft after | Syrup too thick/hot or soak too long |
| Crisp when fresh, soft in box | Steam/condensation during storage |

Jalebi crispy na ho to sab se pehle batter aur oil check karein. Batter thick but pipeable ho, oil medium heat par stable ho aur jalebi ko syrup mein sirf short dip dein. Garam jalebi ko band dabbe mein na rakhein warna steam usay soft kar de gi.
