Why Does Pulao Turn Dry?

Quick answer: Dry pulao usually means the rice received too little usable liquid or lost too much steam before it finished. Old basmati can also absorb differently from a new bag. Measure the yakhni after straining, keep the lid closed during the final steam and stop cooking as soon as the grains are tender.

Starting water is not final yakhni

Stock loses water while meat simmers. If a recipe needs a measured amount of liquid for rice, measure after the yakhni is ready—not when you first fill the pot. Guessing from the starting volume can leave the rice short of moisture.

High heat drives water away too quickly

After the rice and stock come together, use enough heat to establish cooking, then reduce it as the liquid level falls. A hard boil with the lid open can evaporate water faster than the grains absorb it.

Long dum can dry already-cooked rice

If the grains are tender and the free liquid is gone, more time does not make pulao better. It dries the upper layer and increases scorching risk at the base.

Rice age changes absorption

Aged basmati is prized for separate grains but different brands and batches absorb differently. Keep notes on the rice you use regularly. A ratio that worked perfectly with one bag may need a small adjustment with another.

How to rescue slightly dry pulao

Sprinkle a few tablespoons of hot water or unsalted yakhni over the surface, cover tightly and steam on very low heat for a few minutes. Do not pour a full cup into cooked rice; large corrections create wet patches and broken grains.

Roman Urdu

Dry pulao mein yakhni kam, evaporation zyada ya dum lamba ho sakta hai. Finished stock ko measure karein, final steam mein lid band rakhein aur rice tender hote hi heat stop karein. Slightly dry rice ko few tablespoons hot water/yakhni se gentle steam dein.
