How to Fix Curry That Is Too Salty
Confirm the curry is truly over-salted
Stir the curry well and taste a cooled spoonful before changing it; salt can seem stronger in a concentrated gravy. Check whether the sauce has reduced too far before adding anything.
Increase the unsalted base
Add more unsalted cooked onion-tomato masala, vegetables, lentils or meat if they suit the dish. Increase the base in small batches and let it combine before tasting again.
Add more main ingredients if appropriate
If the recipe allows, add a little more of the main unsalted ingredient so the salt is spread across a larger portion. Do not add raw ingredients that need more cooking than the curry can safely provide.
Use unsalted liquid only when texture allows
Use small splashes of unsalted water or stock only when the curry can take extra liquid. Add gradually, simmer briefly and check consistency instead of diluting the whole pot at once.
Avoid relying on potato myths
A potato does not selectively pull salt out of a curry; it absorbs salty liquid along with other flavours. Add potato only if it belongs in the dish, not as a guaranteed salt-removal trick.
Rebalance spice and acidity after dilution
Once saltiness is reduced, taste for chilli, acidity and spices again. Dilution can soften all of them, so correct each gently rather than adding a large amount of seasoning at once.
Choose the correction that suits the curry
| Dish or texture | Safer correction | Watch out for |
|---|---|---|
| Dry chicken karahi | Add a little unsalted cooked tomato or onion base, then toss and simmer briefly. | Large amounts of water can turn a concentrated karahi into thin gravy. |
| Yogurt-based qorma | Increase the unsalted onion-yogurt base only if it can be cooked through; otherwise serve a slightly larger portion with unsalted roti or rice. | Do not add raw yogurt straight into a boiling gravy; it may split. |
| Daal or lentil curry | Stir in a small amount of separately cooked unsalted daal, then simmer until the texture is even. | Extra water alone may thin the daal without fixing the flavour balance. |
| Meat salan with thin gravy | Add a little unsalted stock or water in stages, then simmer and recheck the meat and gravy together. | Do not boil tender meat for a long time just to reduce saltiness. |
Small-batch rescue sequence
- Set aside a spoonful and taste it after cooling slightly; confirm the salt is genuinely too strong.
- Add one small amount of an unsalted ingredient that belongs in the dish.
- Simmer only as long as needed to combine and cook the added ingredient safely.
- Re-taste before adding anything else. If the whole pot is still too salty, repeat in small stages rather than making several changes at once.
