Why Does Paratha Get Hard? 6 Mistakes That Ruin Softness
1. Check the ingredient balance first
Use a soft, pliable dough and add water gradually; atta brands absorb differently. A stiff dough is difficult to roll and can produce a hard paratha even if extra oil is added later.
2. Preparation changes the final texture
Cover the dough and rest it for about 15–20 minutes before rolling. Resting lets the flour hydrate and the dough relax, making it easier to roll without snapping back or tearing.
3. Heat that is too high can create a false shortcut
Keep the tawa at medium to medium-high heat rather than letting it smoke. Too much heat can harden or scorch the surface quickly, while very low heat keeps the paratha cooking too long and dries it out.
4. Too much cooking can be as damaging as too little
Flip when the underside develops light brown spots and finish cooking without leaving it on the tawa for an unnecessarily long time. Overcooking removes moisture and can make the layers tough.
5. Change dough softness or tawa heat one at a time
If the next batch is hard, change one thing at a time: dough softness, resting time or tawa heat. Adding more oil alone will not fix dough that is too dry or has been overcooked.
6. Judge the process, not just the final appearance
A good dough rolls without deep edge cracks, and the cooked paratha should bend rather than snap. Stack cooked parathas under a clean cloth and serve warm to slow moisture loss.
Roman Urdu: Paratha hard kyun ho jata hai?
Roman Urdu: Paratha aksar dry dough, kam resting, belte waqt bohat zyada dry atta, ya taway par zyada der pakane ki wajah se hard hota hai. Sirf extra oil dalne ke bajaye dough aur cooking time theek karein.
