Why Does Pulao Rice Get Mushy or Sticky?

Quick answer: Pulao usually turns mushy when the rice absorbs more liquid than it needs or cooks for too long. Sticky grains can also come from excess surface starch, over-soaking, aggressive stirring or using a rice variety differently from the one the recipe expects.

Too much liquid is the most common problem

Pulao rice cooks by absorbing seasoned stock or water, so the liquid amount matters directly. Meat, vegetables and other ingredients may also release moisture. Count that contribution when judging the pot instead of adding the same amount of water regardless of the recipe or rice.

Rice varieties absorb differently

Older basmati, newer rice and other long-grain varieties do not always behave identically. A ratio that works perfectly for one bag can leave another too soft or undercooked. Use the recipe as a starting point and learn how your particular rice responds.

Over-soaking can make grains fragile

Soaking helps basmati hydrate more evenly, but excessively long soaking can make some grains fragile before they reach the pot. Drain soaked rice well and avoid assuming that a longer soak always creates longer or better grains.

Rinsing helps reduce stickiness

Gently rinse rice in several changes of water to remove loose surface starch. This does not guarantee separate grains by itself, but it reduces one source of gumminess. Handle soaked and rinsed rice carefully so long grains are not broken.

Too much stirring breaks cooked rice

Once rice begins softening, repeated stirring can damage the grains and release more starch. After the rice and liquid are evenly distributed, keep handling to a minimum. When the pulao is finished, fluff gently rather than vigorously mixing the pot.

Control the final steam and resting stage

When most liquid has been absorbed, finish the rice on gentle heat rather than continuing a strong boil. Once cooked, a brief covered rest lets steam settle. Then lift the grains carefully. If your pulao repeatedly turns soft, reduce one variable at a time—usually liquid or cooking time—on the next batch.

Urdu / Roman Urdu: Pulao ke chawal chipak ya gal kyun jate hain?

Roman Urdu: Pulao aksar zyada pani, zyada cooking, over-soaking, surface starch ya bar bar hilane se mushy ya sticky hota hai. Rice ko achi tarah rinse karein, liquid rice ki type ke mutabiq rakhein aur pakte chawal ko kam handle karein.
