Why Does Qorma Oil Not Separate?

Quick answer: Qorma oil usually becomes visible after enough moisture has cooked out and the masala has been properly bhunaoed. If the gravy is still watery, the heat is too low, or wet ingredients were added faster than they could reduce, the oil may remain emulsified in the masala instead of appearing around the edges.

Too much moisture delays oil separation

Yogurt, meat and added water all contribute moisture. While that water remains in the masala, fat can stay dispersed through the gravy. Cook uncovered when the recipe calls for reduction and judge the texture before adding more liquid.

Bhunai needs enough heat and attention

Bhunai is the stage where the masala is cooked and reduced while being stirred so it does not catch. Very low heat can make this stage unnecessarily slow, while uncontrolled high heat can scorch onions or spices. Use steady heat appropriate to your pan and stir more frequently as the mixture thickens.

Yogurt can temporarily hide the oil

Yogurt adds both water and milk solids. Add it as directed by the recipe and give that moisture time to cook down. If yogurt is also splitting into visible curds, solve that technique problem separately rather than treating every change in appearance as normal oil separation.

Onion texture affects the gravy

Pakistani qorma often gets body and colour from browned onions. If onions are undercooked or added with excess moisture, the masala may take longer to reach its finished texture. If they are burnt, however, more cooking will not repair the bitter flavour.

Do not add extra oil just to force the appearance

If the recipe already contains adequate fat, pouring in more oil can make the finished qorma greasy without fixing an under-reduced masala. First check moisture, heat and cooking stage. Add fat only when the recipe itself needs it, not simply to create a visible layer.

Know when the qorma is ready for the next stage

Look for a thicker, cohesive masala with excess water cooked away and small signs of fat appearing at the surface or edges. The exact appearance varies with the recipe and quantity of oil used. Once the masala reaches the intended stage, continue with the recipe rather than reducing until it becomes dry.

Urdu / Roman Urdu: Qorma ka oil alag kyun nahi hota?

Roman Urdu: Qorma ka oil aam tor par tab nazar aata hai jab masalay ki extra nami pak kar kam ho jaye aur bhunai theek tarah ho. Agar gravy pani wali ho, heat bohat kam ho ya yogurt aur doosri geeli cheezen jaldi add ki gayi hon to oil masalay mein mila reh sakta hai.
