Why Does Rice Taste Too Salty?

Quick answer: Rice often becomes too salty because salt was added in more than one place—stock, masala, commercial seasoning and cooking water—or because liquid reduced and concentrated before the grains finished. Taste the liquid that the rice will actually absorb before committing the full batch.

Count every salty component

Pulao yakhni may already be salted. Biryani masala is salted separately, and packaged biryani masala can contain substantial salt. Stock cubes, pickles and some spice mixes add more. Treat them as part of the same salt budget.

Evaporation concentrates stock

Yakhni that tasted mild at the start may be much saltier after a long simmer. Strain and measure it first, then taste before adding rice. Do not season based only on the amount of water you originally poured into the pot.

Biryani boiling water is a special case

Rice parboiled in abundant salted water absorbs only part of that salt because the rest is drained. The water can therefore taste more seasoned than finished rice. But if the chicken masala is also heavily salted, the two layers combine during dum and can overshoot.

If cooked rice is slightly too salty

Prevent it next time

Record salt added to stock and masala separately, taste the reduced liquid, and add the final increment just before rice. Small corrections are safer than one large spoonful.

Roman Urdu

Rice salty ho to aksar stock, masala, packet seasoning aur water sab mein salt add ho chuka hota hai. Reduced yakhni ko rice se pehle taste karein. Cooked rice ko wash na karein; zarurat ho to unsalted rice mix karna zyada predictable fix hai.
