Lassi Too Thin? How to Make Lassi Thicker
Start with the yogurt
Yogurt is the main source of body in traditional lassi. Naturally thick yogurt produces a fuller drink with less adjustment, while loose yogurt needs less added liquid. Stir the yogurt first so you can judge its starting consistency before measuring water or milk.
Add liquid gradually
Recipes give useful starting quantities, but yogurt brands and homemade batches vary. Add part of the water or milk, blend, then check the pour. It is much easier to loosen a thick lassi than to recover one after too much liquid has been added.
Ice can make lassi watery
Ice chills the drink quickly, but it also melts. If you want a thick lassi, use chilled ingredients and add only the amount of ice you actually need. A lassi that sits for a while with a large amount of ice can become noticeably thinner.
Mango and other fruit change the texture
Fruit is not just flavour: ripe mango can add substantial body, while very juicy fruit can introduce more free liquid. For mango lassi, adjust the added milk or water after considering how thick the fruit pulp already is.
How to fix lassi that is already too thin
Add thick yogurt a little at a time and blend briefly until the drink reaches the consistency you want. If the flavour becomes less sweet or less salty after adding yogurt, correct the seasoning afterward. Avoid adding dry thickeners unless a particular recipe is designed for them.
Do not over-correct a thick lassi
Lassi should still be drinkable. If it becomes too thick, loosen it with a small amount of cold water or milk, blend briefly and reassess. The ideal texture depends on whether you are making sweet, salted or fruit lassi, so use the final drinking texture as your guide.
Urdu / Roman Urdu: Lassi patli ho jaye to gaadhi kaise karein?
Roman Urdu: Gaadhi thandi dahi se shuru karein aur pani ya doodh dheere dheere add karein. Agar lassi pehle hi patli ho gayi hai to thori thick dahi blend karein; zyada ice pighal kar lassi ko aur patla kar sakti hai.
