Why Does Your Chai Taste Bitter? 6 Mistakes to Fix
1. You may be using too much tea
More tea leaves do not always create better flavour. Beyond a point they make the brew harsh and astringent. If your usual chai repeatedly tastes bitter, reduce the tea slightly before changing everything else.
2. The tea may be cooking for too long
Extended aggressive boiling can extract more bitter and astringent compounds from tea. Pakistani chai styles do use heat, but longer is not automatically stronger in a pleasant way. Stop once the flavour and colour suit the style you are making.
3. High heat can make a strong brew harsher
A rolling boil combined with a high tea concentration can intensify harshness quickly. Control the heat once the mixture is hot and watch the brew rather than leaving it unattended.
4. Strong spices can be mistaken for tea bitterness
Too much clove, ginger or other assertive spices can create a sharp cup even when the tea itself is not over-extracted. Adjust spices separately so you can identify whether the problem is the tea or the masala.
5. Your milk-to-water balance changes perception
The same amount of tea can taste much stronger in a lighter, water-heavy cup than in a milk-rich one. Use the ratio that suits your chai style and then adjust the tea quantity to that liquid volume.
6. Extra sugar hides the problem instead of fixing it
Sweetness can mask some bitterness but does not correct over-brewed tea. Fix leaf quantity, heat and brewing time first; then sweeten according to taste.
Roman Urdu: Chai karwi kyun ho jati hai?
Roman Urdu: Chai aksar zyada patti, bohat der tak tez boil karne, ya strong masalay ki wajah se karwi lagti hai. Pehle patti thori kam karein aur boiling time control karein; sirf extra cheeni dal kar bitterness ko hide na karein.
