Ingredients for Mutton Biryani
- 1 kg mutton, bone-in pieces
- 4 cups basmati rice
- 1 cup plain yogurt
- 3 onions, thinly sliced
- 3 tomatoes, chopped
- 2 tbsp ginger-garlic paste
- 3 tbsp biryani masala
- Fresh mint and coriander
- 4 green chilies
- 1 lemon
- Whole garam masala
- Salt and cooking oil
How to Make Mutton Biryani
- Wash and soak the basmati rice for 30 minutes.
- Brown the onions, then cook mutton with ginger-garlic paste, tomatoes, yogurt and biryani spices until tender.
- Boil the rice with salt and whole spices until about three-quarters cooked, then drain.
- Layer rice and mutton masala with mint, coriander, green chilies and lemon.
- Cover tightly and cook on low heat for 20 minutes to finish on dum.
- Rest briefly, fluff gently and serve with raita and salad.
