Ingredients for Pakistani Paya
- 4 cleaned beef trotters, cut into pieces
- 2 onions, sliced
- 2 tomatoes, chopped
- 2 tbsp ginger-garlic paste
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp red chili powder
- ½ tsp turmeric
- 1 tsp garam masala
- 8 cups water
- ⅓ cup cooking oil
- Salt to taste
- Fresh ginger, coriander, green chilies and lemon for serving
How to Make Pakistani Paya
- Rinse the cleaned trotters thoroughly and drain.
- Heat oil and brown the onions, then add ginger-garlic paste, tomatoes and spices.
- Add the trotters and cook with the masala for 8 to 10 minutes.
- Add water, cover and simmer gently until the trotters are tender and the broth becomes rich and gelatinous.
- Remove excess fat from the surface if desired and simmer uncovered to adjust the gravy.
- Finish with garam masala and serve with ginger, coriander, green chilies and lemon.
