Chicken Sajji Recipe
Balochistan-inspired whole roasted chicken with a simple salt-and-spice seasoning, cooked until juicy inside and beautifully roasted outside.
Ingredients for Chicken Sajji
- 1 whole chicken, about 1.5 kg
- 2 tbsp lemon juice
- 1 tbsp ginger-garlic paste
- 1.5 tsp salt
- 1 tsp black pepper
- 1 tsp roasted cumin powder
- 1 tsp crushed coriander
- 2 tbsp cooking oil or melted butter
- Lemon wedges for serving
How to Make Chicken Sajji
- Pat the chicken dry and make a few shallow cuts in the thickest parts.
- Mix lemon juice, ginger-garlic paste, salt, pepper, cumin and coriander and rub over the chicken.
- Marinate for at least 45 minutes.
- Roast on a grill, rotisserie or in a hot oven until the chicken is fully cooked and browned.
- Brush lightly with oil or butter during the final stage of roasting.
- Rest for 10 minutes, then serve hot with lemon wedges and rice or naan.
